摘要 |
Prodn. of baked salty savouries such as pretzels, salt sticks, or baguettes comprises: (i) preparing the dough and forming it as appropriate; (ii) subjecting the formed dough to a fermentation process; (iii) opt. immersing in an alkaline soln; (iv) making a slit on the surface of the prod.; (v) baking the prod. The novelty is that, before step (iv) or (v), the dough is subjected to blown cold air for a given period of time during a cooling process which causes the dough to develop a skin. Also claimed is an appts. with a cooling zone/cell unit (30,50) which can be charged with the baking prods. The appts. also has a ventilation system (40) which together with the cooling unit direct chilled air at the baking prods. (31) in the cooling zone/cell unit (30). A control (38) sets the cooling temp., cooling time and the vol. of blown air.
