The present Patent Application relates to a process for producing a rehydratable food preparation which is characterised in that comminuted peel of citrus fruits is pressed so that its water content is decreased by at least 10% absolute and the intermediate product thus obtained is intimately mixed in a ratio of 1:5 to 5:1 with glucose and/or glucose monohydrate and with preservatives, antioxidants, non-stick agents and/or stabilisers.
