PURPOSE: To obtain galactosyltrehalose having a cariostatic action, a Bifidobacterium bacterium-multiplying action, a Ca absorption-stimulating action, an immune-activating action, a carcinogenesis-inhibiting action, etc., and useful as a food additive, etc., by adding β- galactosidase to lactose (-containing raw material) and trehalose (-containing raw material). CONSTITUTION: A method for producing galactosyltrehalose comprises dissolving lactose or a raw material containing lactose and trehalose or a raw material containing trahalose in a 50mM phosphoric acid buffer solution (pH: 7.0), adding β-galactosidase originated from Escherichia coli to the produced solution, reacting the mixture at a temperature of 35 deg.C for 14hr, passing the reaction solution containing the produced galactosyltrehalose through an active carbon column to allow the adsorption of disaccharides or larger saccharides to the active carbon column, washing the active carbon column with purified water, eluting the adsorbed saccharides with 50% ethanol, concentrating the eluted solution, and subsequently fractionating the concentrated solution with a high performance liquid chromatography using a polyamine column. Thus, the objective galactosyltrehalose having physiological effects such as a cariostatic action, a Bifidobacterium bacterium-multiplying action, a calcium absorption-stimulating action, an immune-activating action or a carcinogenesis-inhibiting action, and useful for agricultural foods, sea foods, fermented foods, livestock foods, marine foods, etc., is obtained in a high yield. |
