PURPOSE: To obtainγ-polyglutamic acid useful for foods, cosmetics, medicines, etc., in a high yield by culturing a microorganism having aγ-polyglutamic acid-producing ability in a culture medium containing a soy noodle or its extract, a soy fermentation product or their mixture. CONSTITUTION: A method for producingγ-polyglutamic acid comprises inoculating a microorganism having aγ-polyglutamic acid-producing ability [e.g. Bacillus subtilis MR 141 (FERM P-14692)] in a culture medium containing a soy fermentation product such as a soy noodle or its extract, a soy noodle-charged solution, an unrefined soy, a soy, soy lees or soy refuses or their extract, or their mixture, subjecting the inoculated microorganism to a shaking culture at 40 deg.C for 72hrs, centrifuging the cultured product, correcting the supernatant, and subsequently separating the product from the collected supernatant by an alcohol precipitation method using an alcohol. Thus, the objectiveγ-polyglutamic acid useful in the fields of foods, cosmetics, medicines, etc., in an increased production yield at a low cost. |
