Vegetable concentrate food prods. with excellent organoleptic and flavour properties

Process for the prepn. of a vegetable concentrate foodstuff comprises the following steps: (A) finely cut mixed vegetables are suspended in deionised water without using solvents; (B) the aq. suspension is treated with sound; and (C) the extracted suspension is filtered and cold-concentrated. Also claimed are (i) vegetable concentrates made by this process and (ii) quick to cook food prods. contg. these concentrates.
