PURPOSE: To obtain a coloring matter composition for food excellent in workability for food processing and food qualities and capable of uniformly mixing a coloring matter in foods by allowing to contain a predetermined amount of an unsaturated fatty acid ester of polyglycerin in an oil soluble food color. CONSTITUTION: This coloring matter composition comprises an oil soluble coloring matter for food such as marigold coloring matter, etc., which contains 1-90% one or more unsaturated fatty acid ester of polyglycerin such as a compound having a 2-10 polymerized glycerin residue to which a 16-22C unsaturated fatty acid is bound through an ester bond. |
