The invention concerns a method of improving the taste and smell of, and/or accelerating the ripening process of aromatic and odorous substances in foodstuffs and luxury foods and of all substances intended for oral ingestion. Magnetic or electrical fields of automatically or manually variable frequency are made to act on organoleptically relevant substances present in foodstuffs, thereby producing in these substances substance-specific resonances which cause the separation of complexes formed by these substances and/or of complexes of the organoleptically relevant substances with their solubilizers, such as water or fats. To this end, the invention proposes a device for carrying out the method. In one embodiment, the device comprises a housing (1) in the form of a wine cooler with a chamber (5) for accommodating drinks bottles (51). Elements for generating magnetic or electrical dynamic fields and the associated electronic control system (4) are disposed in the housing. |
