FIELD: food industry. SUBSTANCE: method involves hydrolytic extraction of pectin-containing raw material by cavitation with the use of a hydroacoustic disintegrating extractor. The index of cavitation K is 0.8-1.9. the resulting pulp is separated into the liquid and solid phases in the centrifugal force field with the factor of separation F=90-100. The liquid phase passes through a microfilter. The microfilter membrane pore size is (1-10) 10m. The filtrate is condensed by ultrafiltration with the use of hard-based ultrafiltering membranes with pore diameter (1-10) 10m. The rate of liquid flow is 0.1-2.0 m/s, and the pressure is 0.5-3.1 kg/sq.cm. The material is condensed in a vertical two-chamber straight flow circulation vacuum evaporator. The rarefaction in the condenser is 0.090-0.093 mPa. The content of pectin substances in the condensate is 8-14%. The condensate is dried at 75-92 C. EFFECT: higher product quality; more homogeneous molecular composition of pectin. |
