PURPOSE: To obtain a hydroxy free radical scavenger containing a new lignan glucoside derived from sesame seed as an active component, exhibiting strong hydroxy free radical scavenging action at a small amount and expected to be usable in the fields of foods, cosmetics, pharmaceuticals, etc. CONSTITUTION: This scavenger contains a lignan glucoside of formula (R is glucosyl residue selected from glucose, galactol and fructose; (m) is 1-3; (n) is 0 or 1) as an active component. The scavenger is preferably produced e.g. by extracting powder of wet sesame seed or sprouted sesame seed or its defatted cake with a hydrated lower alcohol, treating the extract with a sugar-chain hydrolase such as β-glucosidase and extracting the treated product with a solvent to remove fat-soluble substances and water-soluble substances. |
