PURPOSE:To transfer a starchy substance to sugar and utilize the reaction product for producing food and drink, by using a polypeptide having cyclomaltodextrin glucanotransferase activitykin which even amino acid sequence thereof is elucidated. CONSTITUTION:The amino acid sequence of apolypeptide cyclomaltodextrin glucanotransferase known for long as an enzyme produced by Bacillis macerans in determined by clonining a polypeptide gene from a bacterium capable of producing the polypeptide and decoding the base sequence. The above-mentioned polypeptide is found to have partial amino acid sequences, expressed by formulas I-V and arranged one after another from the vicinity of the nitrogen terminal side.
