PURPOSE: To obtain an Apios fortunei tea having a taste suitable for general people by drying the petals of Apios fortunei, cutting the dried petals, roasting the cut petals and subsequently rapidly cooling the roasted petals. CONSTITUTION: The method for producing the Apios fortunei comprises drying the petals (which may contain the leaves) of the Apios fortunei, cutting the dried petals into 2-3mm square pieces, roasting the pieces with a far IR light roaster at 110-130 deg.C for approximately 30min, and subsequently rapidly cooling the roasted pieces. The roasting state is controlled so that the tea is colored into yellow or red. The insertion of a steaming process and a drying process before the roasting process enables to milden the smell. |
