PURPOSE:To eliminate color and odor from meat of blue-fish meat and readily and economically obtain a substitute having color and aroma similar to those in meat of white-meat fish by milling meat of the blue-meat fish and a substance, such as potato or garlic, in a meat mill. CONSTITUTION:Meat of blue-meat fish, such as mackerel or sardine, and one or more of potato, garlic, Japanese pepper and tangerine orange skin are milled in a meat mill to afford a meat substitute for white-meat fish. |
