In conventional evaporators, a flask itself revolves, so that vacuum leakage and failures due to damage and wear of a joint, which connects the flask and a drive to each other, and vacuum-sealed portions are unavoidable to make it impossible to employ agitating means for preventing bumping and improving an evaporative capacity. The invention provides an evaporator which prevents bumping and improves an evaporative capacity and eliminates vacuum leakage and sealing failures and wear of a vacuum seal of a drive. More specifically, a permanent magnet is provided in a rotating body supported in an enclosed vessel, and a shifting field generating device is mounted outside the enclosed vessel so that a shifting field generated causes the rotating body to perform predetermined motion to improve an evaporative capacity and the absence of a drive transmission unit and a sealing portion makes various agitating and rotating motions available to find new uses in fields of chemistry, engineering, medicine and the like and develop new operating methods enabling accurate and effective evaporation, concentration, recovery and the like.
