PURPOSE: To provide a method for producing an extract of fishes and shellfishes by which processing residua such as viscera of the fishes and shellfishes disposed of as an industrial waste to be a source for pollution can be disposed of so as to enable the disposal for uses and the amount of the waste disposal can remarkably be reduced to improve the living or natural environment. CONSTITUTION: This method for producing an extract of fishes and shellfishes comprises using an enzymic agent for proteins of viscera, broths, etc., of the fishes and shellfishes, especially the viscera such as mid-gut glands of a scallop, carry out the substance conversion of the proteins into an amino acid form by fermenting operations of a biochemical technique, recover the resultant substance so as to reduce, eliminate and remove cadmium in the extract of the recovered protein digested juice to a content permissible for the disposal for uses in foods, feeds and fertilizers and further hardly detect shellfish poisons. |
