PRODUCTION OF CARROT JUICE

PURPOSE: To provide a method for producing a carrot juice by which a pressed pulp content of a carrot disposed of as a waste can effectively be utilized to afford the carrot juice, having a high carotene content, good in appearance and flavor and suitable for drinking in good yield. CONSTITUTION: A carrot is squeezed and separated into a juice and a pulp contents and the pulp content is then finely divided into particles having 100μm to 3mm average particle diameter. The resultant finely divided material is then pressed with a compression type juice press and the pressed juice is enzymically treated with a cellulolytic enzyme having Cx activities. The enzyme in the resultant enzymically treated material is further inactivated by heating.
