ANTIALLERGIC NOURISHING COMPOSITION

PURPOSE: To obtain an antiallergic nourishing composition, extremely low in antigenicity, excellent in emulsification stability and having higher safety as a food than that of a conventional nourishing composition using a chemical synthetic emulsifying agent due to the use of a fatty globular film ingredient derived from a milk treated with an enzyme. CONSTITUTION: This antiallergic nourishing composition contains a fatty globular film ingredient derived from a milk treated with an enzyme or a peptide having <=5000 molecular weight and/or a free amino acid and the fatty globular film ingredient derived from the milk treated with the enzyme. The antiallergic nourishing composition preferably contains the fatty globular film ingredient derived from the milk treated with the enzyme in an amount of >=0.2wt.% based on the solid content. The molecular weight of proteins contained in the fatty globular film ingredient derived from the milk treated with the enzyme is preferably <=5000. Thereby, the antiallergic nourishing composition is extremely useful as a nourishing composition for preventing and treating allergic diseases in infants or adults.
