PURPOSE: To efficiently obtain the subject compound, good in acid and salt resistances and solubility and useful for a hydrophilic emulsifying agent, etc., by reacting and esterifying a ketalized sucrose with a fatty acid in the presence of an esterifying enzyme and then hydrolyzing the ketalized part. CONSTITUTION: 2-Methoxypropene, etc., are added to ketalize sucrose in the presence of p-toluenesulfonic acid in N,N-dimethylformamide to provide a sucrose ketal (e.g. 4,6-O-isopropylidenesucrose). An enzyme capable of catalyzing the esterification of hydroxyl groups in the sucrose ketal (e.g. a lipase derived from Mucor miehei) is then reacted with the resultant sucrose ketal and a fatty acid (e.g. myristic acid) to produce a sucrose ketal ester of the fatty acid. The ketal moiety of the prepared sucrose ketal ester of the fatty acid is subsequently hydrolyzed to efficiently afford the objective sucrose ester of the fatty acid, excellent in acid and salt resistances and solubility and useful as a hydrophilic emulsifying agent, etc. |
