A process for treating pastes and liquors prepd. from cocoa beans which have been fermented for 1-15 days, comprises mixing the cocoa paste or liquor with at least one protease in aq. medium at pH 3-8 and incubating the mixt. under time/temp. conditions sufficient to hydrolyse the proteins and peptides in the mixt. |
