FIELD: study of materials. SUBSTANCE: invention may find use in food industry, specifically in flour-and-cereals and baking branches of it for manufacture of wheat and rye flour and preparation of bread, rolls and buns. System has water bath with cooling lid and test tubes installed in its holes, stirring mechanism which rods are placed in test tubes and connected with the use of kinematic and electromechanical couplings to electromechanical unit and control desk. System is fitted with strain-gauge transducer coupled to rods of stirring mechanism to determine character of change of consistency of examined water-and-flour suspension.
