The soluble instant coffee is obtained from caramelized coffee extract powder and has a GC profile for volatile aroma compounds according to Fig. 1c. The process is the following: the ground green coffee is extracted with water, the extract is dried to obtain a green powder, this powder is caramelized at a temperature of 130 to 240 DEG C, cooled and ground.
