The deep fat fryer comprises a vessel (3) intended to receive an oil bath for cooking chips. A heating system is provided which includes electric immersion heater elements (4) within the vessel, directly in contact with the oil. Further heating elements are also provided in the wall of the vessel. These are not directly in contact with the oil. Temperature sensing probes are mounted both in the wall of the vessel, and in the immersion heater elements in order to enable control of the temperature of the oil. A movable basket (9) holds the food to be cooked. The system holds the temperature of the oil at 180 degrees Celsius, and is configured to encourage circulation of the oil by a thermo-syphon effect.
