PURPOSE: To obtain a specific extract seasoning comprising an extract seasoning, an oil and fat, and a specific saccharide in a specific ratio, homogeneously containing the oil and fat without being emulsified, capable of being easily supplied at a low cost, and useful as a raw material for processed foods, etc. CONSTITUTION: This specific extract seasoning comprises (A) 100 pts.wt. of an extract seasoning (viscosity: preferably 5000-15000cp at 25 deg.C) originated from livestock, fishes, shellfishes, etc., (B) 1-50 pts.wt. of an oil and fat such as lard, and (C) a porous saccharide, such as glucose, high in solubility in water in an amount comprising approximately a half of that of the oil and fat. Therein, the oil and fat is homogeneously contained without being emulsified. The extract seasoning is obtained by mixing the extract seasoning with a mixture comprising the porous saccharide high in solubility in water and the oil and fat adsorbed thereon. |
