PURPOSE: To provide the method for producing the fermented solution for adding to the foods or beverages, capable of more surely degrading a raw material in a good environment free from the breeding of various germs, by fermenting the raw material such as rice bran or soybeans in an alkaline environment. CONSTITUTION: This method for producing the fermented solution for adding to foods or beverages comprises a process for adding an alkaline protease to a controlled raw material containing rice bran and/or soybeans and having a pH of >=8.5, a process for adding at least one kind of an alkalophilic microorganism and an alkali-resistant yeast, a process for fermenting the raw material for a prescribed time in a state preventing the contamination of various germs and controlled to a pH of >=8.5, and a process for collecting the liquid part from the produced solid-liquid product after the fermentation process. |
