发明名称 MALTOTETRAOSE AND FOOD-BEVERAGE CONTAINING THE SAME
摘要 PURPOSE: To obtain a maltotetraose-productive amylase useful for producing from starch a low-sweetness/low-saccharinity starch partial decomposition product rich in maltotetraose. CONSTITUTION: The objective maltotetraose-productive amylase usable in an industrially advantageous way and excellent in pH stability and heat resistance compared to that produced from Pseudomonas stutzeri NRRL-B-3389, is obtained by culturing e.g. Pseudomonas stutzeri MO-19 (FERM BP-1682) and has the following physicochemical characteristics: (1) acting on starch to form chiefly maltotetraose; also acting on amylose, amilopectin, glycogen, or β-limit dextrin; (2) optimum pH: 7.0-7.5; (3) optimum temperature: 50 deg.C or so; (4) molecular weight: 46000±1000 (determined by SDS-polyacrylamide gel electrophoresis); and (5) isoelectric point: 4.8 or so.
