PURPOSE: To obtain soybean product such as soybean paste or soybean sauce of high quality using the residue after separation of hemicellulose from bean curd (TOFU) refuse, while the costs of the raw material is reduced and the production process is short-cut. CONSTITUTION: This soybean product is produced by using the waste residue after hemicellulose is removed from soybean curd refuse as a by-product on the production of soybean protein. The hemicellulose is removed, preferably by heat-treating the hydrated soybean lees at a pH of 3-7, preferably 4-6, and the amount of water to be added to the lees is preferably 3-30wt.% on the solid basis. |
