A PROCESS FOR EXTRUDING GELLED PRODUCT

A method and apparatus for extruding a gel with a preselected shape without breaking by continuously forming a gelling mixture and conveying it into a plurality of extrusion dies in a manner to avoid shear during the gelling and conveying stage. The gelled extrudate may be produced in the form of onion rings having improved taste, texture, flavor, visual appearance and variations in size and diameter. An improved method for cutting off the gelled extrudate is also disclosed.
