PURPOSE: To obtain a durability enhancing agent for a food containing lysozyme, amino acid (salt), an organic acid (salt) and an acetic salt, having mild taste and excellent solubility and capable of enhancing the durability of a keepable food by means of bacteriostatic activity. CONSTITUTION: This agent contains (A) lysozyme preferably in 0.05-0.5wt.%, (B) an amino acid (preferably, glycine or alanine) or its salt preferably in 10-30wt.%, (C) an organic acid (preferably, fumaric acid or adipic acid) or its salt in preferably 1-40wt.% and (D) an acetic acid salt (preferably, sodium salt) in preferably 35-50wt.%. Preferable amount for addition is 0.1-1wt.%. |
