The conversion method of flatfish (I) Paralichthys olivaceus from female to male consists of (1) irradiating ultraviolet light of 3000-4500 erg/ square millimeter for 40-50 seconds to sperms of (I) or seabream to infertile in an apparatus (II), (2) mating infertile sperms to homogeneous eggs of (I) at 15-22 deg.C, (3) treating mating eggs at 2 deg.C for 45 min., (4) culturing the hatched eggs of female for 70 days, (5) transferring female at 25 deg.C and culturing for 30 days for conserving to male. Male (I) is useful for raw fish. (II) is a box which has a rotating plate at the bottom to make water flow and a uv light at the top. Through the windows at the facing surfaces, water is flowed.
