摘要 Kefir is prepared by acid fermentation of the alcohol fermentation material, wherein glucose is added in reduced deffated milk for medium, heat it at 95 deg.C and cool it by 31 deg.C. The alcohol fermentation is processed by cultivating east culture at 31 deg. C during 16 hours in the medium, the alcohol fermentation material is inoculated with the mixture of 6 spices latic cultures, and the acid fermentation is proceed by cultivating the inoculated mixture at about 22 deg. C during about 16 hours.
