PURPOSE: To obtain anα-sulfofatty acid derivative excellent in water-soluble property, hydrolytic resistance and mild property to skin and hair and having good anion resistance, foaming force, emulsifying force and dispersing force and retaining force of scent. CONSTITUTION: This derivative is expressed by formula I [Z-(OH)q is a sugar; R<1> and R<4> are each a 1-30C linear aliphatic group; R<2> is a 4-30C linear aliphatic group; R<3> and R<5> are each a 1-4C alkylene; M is H or a salt-forming cation; (q) is >=3; (w) is 0 or >=1; (s) is >=1; (t) and (u) are each 0-20; (w+1+s)<=(q)], e.g.α-methylglucoside (α-sufopalmitic acid)ester. The derivative expressed by formula I is obtained by previously mixing and dissolving a sugar derivative expressed by formula II with anα-sulfofatty acid ester expressed by formula III (R<2> is an alkyl) at 40-60 deg.C and subjecting these compounds transesterification reaction at 95-110 deg.C under reduced pressure using a catalyst such as para- toluenesulfonic acid. The molar ratio w/s of R<4> to SO3 M contained in the molecule when the derivative is obtained is preferably 1-0.5.
