PURPOSE: To obtain the subject new compound useful as a sustained release fragrant component, having excellent water solubility and shelf stability, capable of developing a fragrance with an inexpensive and readily obtainable enzyme by treating citronellol and lactose with β-galactosidase. CONSTITUTION: This new citronellolyl-β-D-galactopyranoside is shown by the formula. The citronellolyl-β-D-galactopyranoside has excellent water solubility and shelf stability, is capable of developing fragrance of citronellol by hydrolysis with an inexpensive and readily obtainable β-galactosidase, expands a utility range in the fields of medicines, foods and favorite foods and is uable as cosmetics such as perfume, eau de cologne, shampoo, rinse, soap, hair dressing agent, mouth washing agent and anhidrotics and massaging powder, foods such as refreshing beverage, cake, diary product, alcoholic liquors and tobacco, aroma, paper diaper and bathing agent. The compound is obtained by treating a mixture of citronellol and lactose or a lactose-containing substance with β-galactosidase or a bacterial cell containing the same. |
