FIELD: food-processing industry. SUBSTANCE: method involves selectively withdrawing extract from basic raw material by processing minced garlic in carbon dioxide gas medium under supercritical working parameters, i.e. temperature of 31-35 C and pressure of 7.3-15 MPa for 0.1-0.8 hour; regenerating solvent and separating oil in at least one separator stage at pressure of 2-5 MPa. EFFECT: increased efficiency, simplified method and improved quality of product. |
