PURPOSE: To obtain the subject food capable of helping homeostasis-keeping function of a body in current life and useful for lowering fatigue of mind and body, having high stability without side effect by containing cultured fungi derived from FUNAZUSHI (vinegared rice and crucian) or its pickled residua as a main component. CONSTITUTION: Scales and internal organs, etc., of a crucian caught in spring are removed, sufficient amount of salt is added to the residual main body, and then the crucian body is treated by piling with arranging in a trough, applying a weight with a fall lid after a whole day and night, continuing the state until about midsummer, washing, and removing water by drying in the shade. Then, the crucian and boiled rice are piled in a trough in sandwich-like with the top and bottom as boiled rice and a cover is set using a bamboo sheath, a fall lid made of wood is set and a weight is placed, salt water is filled over the lid of the trough after two days, changing salt water one time for every month until about January or February to obtain FUNAZUSHI. The resultant FUNAZUSHI or its pickled residua are sterilized and mixed with a medium and agar-agar, poured into a Petri dish and solidified, cultured in an incubator at 32-37 deg.C for two days, the colony is further cultured and freeze-dried, and fungus powder is obtained, then the resultant powder is added to food to afford the object food. |
