PROBLEM TO BE SOLVED: To obtain a composition capable of being used in a low concentration, capable of minimizing side effects, and used for protecting a skin, a hair and a mucosa from oxidation stress by using a dehydroalanine, a part of which is new, as an active ingredient. SOLUTION: This composition contains a dehydroalanine of formula I R1 is H or a 1-4C alkyl; R2 is formulas II (X1 to X5 are each H, a halogen, OH, an alkyl, etc.) or III [(n) is 2-4], and an alkali metal, an alkaline earth metal or an ammonium salt thereof and is used for a perfumery treatment to prevent a skin, a hair and a mucosa from oxidation stress. The compound of formula I manifests the activities in a low concentration such as 0.001-10 wt.%, preferably 0.01-2 wt.%. The compound of formula I is exemplified by N- benzoyldehydroalanine and N-(o-toluyl)dehydroalanine. Compounds of formulas IV [R1 is H; X is a halogen; R is an alkyl residue; (n)+(M)=1-5; (p) is 0 or 1] and V [(n) is 2-4, R1 is H or an alkyl] are new.
