PURPOSE: To obtain a semifinished product of YUSHI-DOFU (a semibean curd state prepared by adding a coagulant to soybean milk in a boiled state just before preparing bean curd) designed to enable the simple preparation just before serving on a table and provide a method for producing the YUSHI-DOFU. CONSTITUTION: This method for producing YUSHI-DOFU is to add water to soybeans, pulverize the soybeans, strain the resultant pulverized liquid material, provide a milky white liquid, then mix the milky white liquid with a coagulant and subsequently heat the prepared mixture. |
