PURPOSE: To obtain a new enzyme localized at a microsome among ω-3 fatty acid-unsaturating enzymes each having ability to introduce a double bond onto the ω-3 site of a fatty acid, capable of improving the cold resistance of plants through controlling the degree of unsaturation in fatty acid(s) found in the plants such as rice, thus capable of giving cold-resistant rice. CONSTITUTION: This new enzyme has an amino acid sequence including that of the formula, being localized at a microsome among ω-3 fatty acid- unsaturating enzymes each having ability to introduce a double bond onto the ω-3 site of a fatty acid. The gene of this enzyme is connected in the sense and anti-sense directions to a downstream point of a promoter working in a plant and integrated into the nuclear genome of a plant such as rice to control the degree of unsaturation in fatty acid(s) found in the plant to improve the quality (e.g. cold resistance) of the plant, thus enabling e.g. cold-resistant rice to be produced. This enzyme is obtained by screening a cDNA library derived from ripened rice seeds with a probe consisting of part of the gene of a ω-3 fatty acid-unsaturating enzyme, integrating the resultant gene into a vector followed by manifesting the gene. |
