PURPOSE: To provide a method for producing a seasoning, capable of efficiently producing the seasoning with an enzyme giving substances large in seasoning forces and inhibiting the multiplication of microorganisms and the production of DCP, MCP, etc., of HAP, by an enzymatic degradation method, and further to provide the seasoning obtained therefrom. CONSTITUTION: The method for producing the seasoning comprises hydrolyzing an animal protein raw material with two or more kinds of enzymes selected from a group consisting of (I) the cells of the genus Bacillus or an enzyme extracted therefrom, (II) the cells of the genus Aspergillus or an enzyme extracted therefrom, (III) the cells of the genus Rhizopus or an enzyme extracted therefrom, (IV) the crude extract of Carica papaya or its purified enzyme, and (V) the crude extract of Pineapple cannery or its purified enzyme in two or more reaction steps. |
