The present disclosure is related to an industrial process for the production of chitin from crab waste wherein three basic stages are included: demineralization to remove inorganic components, deproteinization to dissolve the protein and whitening of the treated waste. The deproteinization process includes a waste treatment with enzymes such as trypsin, papain or pepsin to break the peptide bonds of the crab proteins. The invention process when using trypsin in the residue deproteinization stage, allows yields of 13.4% with a purity percentage of 92.1%; using pepsin in the residue deproteinization stage, allows yields of 28.4% with a purity percentage of 97.1%; and when using papain, in the residue deproteinization stage, allows yields of 13.9% with a purity percentage of 97.1%. |
