The bone of a ham joint is removed before cooking, the joint prepared and the bone replaced. The ham is then cooked and the bone removed before slicing. While the bone is out of the joint its lower (knee) end (8) is cut off and a loop of plastic (4) passed around the shaft of the bone (2), which will not pass over the head end (11). The opposite end of the loop has a ring (6) which extends outside the joint of meat after the bone has been replaced and the joint cooked, allowing the bone to be pulled out again.
