FIELD: dairy industry. SUBSTANCE: method involves whey collection, clearing, pasteurization, cooling, microfiltration, diafiltration up to ash content 0.6-0.75% and electroconductivity value 19-23 Omm., not above. Demineralized whey is heated up to 50 C (not above) and ultrafiltration is carried out at this temperature up to dry matter content 15-17 wt.-%. Concentrate is pasteurized. Method can be used for whey protein concentrate producing used in children nutrition. EFFECT: improved method of preparing. |
