Instant food prods. comprising cereals with vegetables comprise (dry wt basis): 2-90% vegetable, 8-96% cereal, 2-15% added fat, 0-1% Ca salt, 0-1% NaCl, 0-5% a caseinate and 0-1.5% colourant, have a bulk density of 100-500 g/l and a water content of 1.5-15%. Also claimed is the prodn of the instant food prods. by cooking and extruding a starting mixt contg 23-70 wt% water and, in pts. wt., 9-110 cereal, 7-300 vegetable puree, 0-20 vegetable powder, 2-10 added fat, with 0-1% Ca salt, 0-1% NaCl, 0-5% added protein and 0-1.5% colourant, while removing (aspirating or allowing to escape) sufficient water vapour to give an extrudate contg 15-23 wt% water; cutting the extrudate into pieces; and drying the pieces. |
