PURPOSE: To obtain a sweetener which has a comparable sweetness to that of starch syrup and is useful in candies or beverage by saccharifying Amaranthus with an enzyme such as amylase and filtering and/or concentrating the liquefied product. CONSTITUTION: An annual plant, barnyard millet (Amaranthus), is enzymatically saccharified with e.g. amylase and the liquefied product is filtered and/or concentrated. The concentrated product is combined with sugar and concentrated by boiling to give candies, or with vegetables and/or fruits and they are sterilized with heat to give beverage. The food products containing Amaranthus is considerably effective for atopic diseases. |
