PURPOSE: To provide a taste and flavor improver which contains an extract of raw sheath vanilla with a polar solvent, thus can enhance or improve the taste and flavor to markedly increase their commodity values by adding the extract to a variety of beverage and food. CONSTITUTION: The raw sheaths of vanilla is extracted with a polar solvent such s water, methanol, or ethanol to give an extract containing 2-(1- methylpropyl)tartaric acid bis-4-(β-D-glycopyranosyloxy)benzyl as this taste and flavor improver. This extract is preferably added to a beverage or food in an amount of 0.0001-1wt.%. |
