PURPOSE: To obtain a natural antioxidant, containing an alkanoyl- hydroxytryptamine, readily producible from a natural product such as coffee beans, having excellent antioxidant properties and useful as an antioxidant for foods, cosmetics, etc. CONSTITUTION: This antioxidant containing an Nβ-alkanoyl-5-hydroxytryptamine of the formula is obtained by extracting pulverized coffee raw beans or a coffee extract with an aqueous solution of ethyl alcohol at >=40wt.% concentration, converting the extract solution into a concentrated solution or drying the extract solution into powder and, as necessary, adding >=5wt.% alanine or >=5wt.% glycine thereto.
