PURPOSE: To provide a jelly form of NATTO (fermented soybean) which can be combined with insufficient nutrients and effective components for health without any adverse effect on the nutritive values of this food and can be eaten willingly because the unpleasantness of NATTO is improved. CONSTITUTION: Suitably produced NATTO beans are ground into slurry, which is mixed with oligosaccharide, honey, wheat embryo and vitamin C and the pH of the mixture is adjusted, charged in paper cups and solidified to a jelly by cooling. Thus, the unpleasant smell is removed, the slime substance is solidified by absorption, the bifidobacteria acidify the bowels to inhibit hazardous microorganisms from proliferation, synthesize vitamins and resolve constipation in the synergism with edible fibers such as agar-agar to normalize the bowel behaviors. In addition, natural vitamins, minerals in the honey and the nutrients in wheat embryo are admixed to the good taste and nutrients in the NATTO to give this nutrition-enhanced and health food having a refined taste. |
