FIELD: biotechnology, biochemistry. SUBSTANCE: method involves extraction of enzyme preparation from muscle tissue of Atlantic herring, carp and Atlantic pollack. Muscle tissue is homogenized in 0.07-0.15% KCl solution at volume ratio of tissue and solution = 1:(1-1.5), at 0-4 C. Homogenate is extracted with 0.07-0.15% KCl solution at mass ratio of tissue and solution = 1:(3-4), obtained precipitate is separated by centrifugation and enzyme is purified from ballast proteins by affinity chromatography for two steps at pH = 5.0-6.5 at an intermediate dialysis against 0.007-0.015% KCl solution followed by lyophilic drying. Product can be used in food industry, biotechnology and medicine. EFFECT: increased yield of product, simplified process. |
