The oyster opening knife comprises a thin long blade (1) fixedto a handle (2) and a movable guard (3) orthogonal to the blade.The guard can slide longitudinally relative to the blade fromthe blade free end (1a) as far as the handle.The blade has a longitudinal guide slot (4) in which a thin central part of the guard can slide. The guard central part is made of metal and has projecting side parts (8,9), projecting beyond the guard, fixed to it.
