<p>A plant for treating heat-sensitive fluid foodstuffs, such as whey protein concentrate and cheese milk, said plant comprising an infusion chamber (1), in which the fluid is subjected to a heat treatment by a feeding therein of steam, and a vacuum chamber (10) connected thereto and for removing water from the fluid. The outlet opening (18) of the infusion chamber (1) is directly connected to the inlet of a positive-displacement pump (13), and the outlet of said positive-displacement pump (13) is connected to the inlet of the vacuum chamber (10) in such a manner that during running of the plant a pressure drop applies across the pump when seen in the flow direction of the fluid.</p> |
