PURPOSE: To obtain a seasoning raw material containing a new amino acid derivative or its analogue and capable of providing mild sourness by adding to a natural extract processed food, its substituting food, a basic soup stock, etc. CONSTITUTION: This seasoning raw material contains a compound os formula I [X and Y are each N or NH and Z is O or OH and when X is N and Y is NH, Z is 0 and *1 and *2 are each a double bond and when X is NH and Y is N, Z is O and *2 and *3 are each a double bond and when X and Y are each N, Z is OH and *2 and *4 are each a double bond; when R is a side chain derived from amino acid, e.g. when R is H, the amino acid is glycine and when R is CH3 , the amino acid is alanine] [e.g. N-(1-methyl-4-oxo-2- imidazolin-2-yl)alanine] or its analogue, e.g. a compound of formula II. The compound of formula II is obtained by reacting creatinine with methyl 2- bromopropionate to afford a compound of formula III (Me is methyl) and hydrolyzing the compound of formula III. |
