<p>A cell which does not contain a natural nisA gene but expresses a nisin comprising a variant nisA gene wherein the variant nisA gene has the same relationship as the natural nisA gene to a gene cluster containing the natural nisA gene and the genes for nisin modification, secretion and immunity. Preferably the natural, chromosomal nisA gene is absent and the cell comprises a variant nisA gene at the chromosomal location of the said natural nisA gene. Methods of making the cells, and processes for producing nisin, in particular variant nisin, are described.</p> |
